BACK TO SCHOOL BLUES?

Quick, easy and tasty!

Hi guys, super pain that I am, I did another disappearing act... don’t hate me, I have a super excuse this time. I’ve been growing a human! 

JB and I have just been enjoying our time together and making the most of life as a twosome. I am now fully back in the blogosphere and ready to share all the recipes I’ve been building up.

For most of us in one way shape or form, going back to school Is a real thing, whether you’re a teacher, student, parent or going back after annual leave, one of the furthest things from most people’s minds is dinner. 

Now more than ever I am so much more conscious of what I’m eating, rumour has it our little peanut gets first dibs on nutrients... go figure. That being said, I make a more conscious effort to pack in double helpings of goodness.

With all you back to the grinders in mind this one pan Latin American influenced bake is the perfect dinner idea after those seemingly endless days. It's a foolproof recipe that takes very little prep, generates very little washing up but is packed with tonnes of flavour! Check it out.

INGREDIENTS - makes 2 decent portions
2 chicken breasts
100g chorizo
1 medium sized sweet potato
1 pepper
1 red onion
1 clove of garlic
1 tbsp oregano
Salt and pepper to season

METHOD
1. Preheat the oven to 200oc
2. Cut the chicken into bite sized pieces
2. Cut the chorizo into centimeter thick rings then half them and finely dice your garlic
3. Next, take your sweet potato, pepper and onion and cut into similar sized wedges
4. With all the prep done, layer all ingredients onto a baking tray and evenly sprinkle with the diced garlic, oregano, salt and pepper*** then bake in the oven for 30-35 minutes turning once halfway through

Serve with some chunky salsa, sour cream or guacamole and enjoy : ) x

***You do not need to add any oil to stop it from sticking because the chorizo releases its own wonderful paprika spiced oil to help you along!
