I've been hearing so much on social media, tv adverts and the radio about veganuary and I have to say the idea intrigues me. So much so that I thought i'd give it a bash but... eggs you know!  Instead I decided to go a day in the life of a vegetarian. Now I left it right until the end of the month as you may be able to tell... queue eye roll!

I was a pescetarian for around a decade so you'd think this would come easy but creative and exciting foods with no meat or fish will be a challenge I've not thought about for a looong time. I have the odd recipe in my repertoire that I love, like my beet salad but that thing needs expanding. 

Now a fair few of my friends old and new found are veggies and no matter how good their food looks there's one problem. The cheese! I'm sure you all know by now how I feel about cheese in my life, no way no how!

So here goes, a day in the life of a vege and all it entails. I was initially going to do a week buuuut let's face it... I'm a walking talking stereotype on this! Chicken is life... #allthingschicken #chickenfiend (hashtags optional). I started out with a huge veg filled omelette, spinach, peppers the lot! When for a tofu stir fry dinner and snacked on this cheeky hummus throughout the day.
400g chick peas drained but save the water
Juice and zest of 1 lemon
2 cloves garlic
Salt and pepper to season

 - 80g of sundried tomatoes 
 - finely chopped chilli

1. Peel and chop the garlic and put in your food processor or blender (a nutribullet works a treat)
2. Add your drained chick peas to the container as well as the lemon juice and zest
3. Blend until the required consistency and season to taste
4. Serve with crudites or some seeds and nuts for texture.
