Minted lamb chops

Nothing says Spring to me more than lamb, mint and super fresh peas. Aside from being super tasty and an obvious winning combination, because everything is in season you usually get it at pretty reasonable prices... your pocket will thank you! Peas are one of my favourite vegetables and they are so good when they're in season.  

I love this dish for a couple of reasons, firstly it tastes immense and secondly, it is so versatile. If it's a  nice day it is amazing barbequed plus if it's a pretty shocking day and comfort food is needed it works really well with mash. JB's in a loving relationship with all things potato so this makes him ecstatic! 

The marinade also makes a fantastic gravy for all the sauce fiends out there. Cook it down in a pan, add a table spoon of flour and whisk in some boiling water. You can then reduce it down to the desired thickness... YUM!

INGREDIENTS - serves 2
4 chops from a rack of lamb
2 tbsp mint sauce
2 tbsp olive oil
2 cloves of garlic
Juice and zest of 1/2 lemon
1 tsp dried parsley
1/2 tsp mild chilli powder
salt and pepper to season

1. Crush the garlic with a pinch of salt until it is a smooth paste
2. Mix the garlic with olive oil, coriander, chilli powder and mint sauce until fully combined
3. Coat the lamb in the marinade to tenderise for 20 minutes
4. Grill for 3 minutes on a pre-heated George Foreman or 3 minutes either side in a hot dry pan.
