CARBS ARE NOT MY ENEMY

I love carbs...
In my mind, there is nothing better than a good pasta dish, there's also nothing worse than a bad one, you would think it's hard to do but trust me I've come across many. It's one of the reasons I rarely order a pasta dish when eating out.

One of the reasons I love pasta in particular is the fact you can cobble a good dish together in very little time! I have tried and tested a whole lot of pasta and like to think I know a bit about it. I mean come on... two of my top three favourite foods are pasta dishes. Spaghetti and clams then lasagne, not that you asked, I just wanted to share.

Correct me if you disagree but in my mind there are two things that make a perfect pasta dish. First a good sauce, just enough to coat the pasta with and second being cooked al dente. Who with the ability and choice to chew would rather eat mush? I cook my pasta for four minutes less than advised on the packet so I can finish it off in the sauce giving it a chance to soak up the flavor and make sure it isn't overcooked.

INGREDIENTS - serves 4
400g chicken breast diced
250g penne
100g spinach
20 cherry tomatoes
2 stock cubes (I used Oxo chicken cubes)

200ml water
1 tbsp. olive oil
Salt
Pepper
Mixed herbs


METHOD
1. Boil the fusilli for 2 minutes less than stated on the packet

2. In a separate pan gently heat the oil and add your diced chicken, crumbling over the stock cubes
3. When the chicken is white on the outside add the water and cook for 10 minutes until white throughout
4. Half the tomatoes and sprinkle with the salt, pepper and herbs then add to the chicken
5. When the pasta is cooked add to the chicken for a final 2 minutes

6. Add the spinach a handful at a time and stir in until wilted
