WINGING IT

My comfort food at it's simplest!

I am all about making life easier for myself and this usually falls into part of my prep. If you don't marinade meat before you freeze it, you're missing a trick... seriously! Why would you not add flavour for longer?


Aside from ribs I have to say, chicken wings are up there in terms of my favourite kind of picky foods, to the extent that I always have a bag in the freezer... true story. Comfort food for me is something that reminds me of home and warmth. That being said, chicken wings have to be right up there, anybody that has ever been fed by my mother bear will know exactly what I'm talking about.

This week, the sun decided to make an appearance and I was feeling bbq without the hassle, I took these bad boys out to defrost and that was the beginning of the end. They are that good I've had wings for dinner THREE times a week.

Not even sorry! Try them and see : )

INGREDIENTS - should serve 6 or even 8 as a starter but we can see it off between us (don't judge)
2kg chicken wings
Juice of a whole lemon
2tbsp olive oil
2tbsp mild chilli sauce (I use siracha)
2tbsp black pepper (use less if you don't like too much heat)
2tbsp salt
2tbsp mixed herbs

METHOD
1. Split your wings in two or ask your butcher to do it and put in a large food bag
2. Add all your marinade ingredients into the bag and give it a shake until well mixed

***your wings can be frozen at this stage***

3. Make sure your wings are at room temperature
4. Preheat your oven to 180oc
5. Bake wings for 30 minutes
