Don't just drink your coffee

I never thought I'd become the sort of girl that travels with her own coffee but I have.. I'm only a little ashamed to admit it. I used to drink six or seven cups a day at uni and when I started teaching but when I started feeling jittery I knew something had to give : ( I am beyond in love with Taylor's of Harrogate coffee and now they do coffee bags... woop!

I've cut it down to two or three cups max but it hasn't stopped me trying to figure out how else to add more caffeine in my life. I haven't had chocolate mousse in ages and figured it can be relatively low cal. I've played about and come up with a recipe that uses a little sugar, only to stabilise the egg white, with natural sweetness from the fruit. Absolute winning combination.

INGREDIENTS - serves 8
90g plain chocolate - at least 55g cocoa solids
75g blueberries (I used frozen)
50g double cream
2 eggs separated
25g caster sugar
2 tsp ground coffee

METHOD
1. Over a pot of water on the heat, melt the chocolate with the coffee and a splash of boiling water
2. In a separate bowl, whisk the egg whites with half the sugar until it creates stiff white peaks
3. Whisk the egg yolks with the remaining sugar until pale and foamy
4. Whisk the double cream until it holds its shape
5. Mix the chocolate until it's mostly melted and glossy then take off the heat and mix in the double cream and egg yolk mixture
6. Fold in the egg whites a third at a time being careful not to knock too much of the air out of it until the mixture is glossy with a lot of air bubbles
7. Divide the blueberries into your ramekins and carefully pour the mousse over
8. Chill in the fridge for at least an hour
