So, in case you haven't heard it on the grapevine... JB and I tied the knot on 13th April. It was an amazing week and we are still in a bubble of Italian induced happiness. It still makes me laugh that people think I made the decision to prep based on our wedding, I mean come on, it's one day... a pretty damn special day but still, ONE DAY! I told you all that for me, it was a lifestyle choice and I maintain that!

That being said, on the first Sunday back obviously, I'm back to it. It isn't a chore and I couldn't be happier. As much as I loved eating what I want when I wanted whilst in Sorrento, I definitely didn't enjoy the time wasted trying to decide what to eat. Gaaahhhh who knew I was so indecisive?? (Don't answer that).

One thing I'm always reminded of in Italy is that simplicity doesn't have to be boring! Point in case my chicken broccoli pasta. A prep win!


INGREDIENTS - serves 2
300g chicken breast
150g broccoli
100g pasta (I used farfalle)
1 tbsp olive oil
Juice and zest of a lemon
2 tbsp mixed herbs
Salt and pepper to season

1. Preheat the oven to 180°c
2. Chop the chicken into bite sized pieces and put into a food bag (you know how I feel about washing up)
3. Add the lemon juice, zest, olive oil and herbs to the chicken and coat thoroughly
4. Put the chicken in an oven proof dish, season and bake for 20mins
5. In the meantime, cut the broccoli into even sized florets
6. Cook your pasta as directed on the packet and add the broccoli when you have 6mins remaining 
7. Drain the pasta and broccoli when cooked and set aside
8. Remove the chicken from the oven when cooked and stir in the pasta and broccoli so it is coated in the lemon sauce
9. Serve hot or cold and grate over some cheese... if you're into that kind of thing
