What is the point though?


What's the point? You must have too much time on your hands. How can you be bothered? These are a few of the statements made by people and questions that I get asked on a regular basis and it drives home to me that some people just can't fathom why I bother. I'm going to lay it out for you, it's nothing new, no new fangled sense of reasoning, I bother for me!
I am not claiming to be an expert at all but I want to go through my reasons for falling in love with meal prep. 


I have been meal prepping for nearly a year now and I can honestly say it has changed my life. I spend 2 hours a week usually on a Sunday and prep 80% of my meals. 

Life is so much easier not having to worry about those indecisive 20 minutes in a morning deciding what to have for lunch. 

As a girl who enjoys my food I constantly crave variety and having last night's leftovers for lunch the next day just wasn't cutting it anymore.

Nowadays I have variety, colour and balance in my meals every day. I play the 80-20 game. 80% of my meals are pre-planned to include everything my body needs to function but I still have room for treats because duhhh, I have a sweet tooth and love a treat.

Being so prepared leaves me reaching for something good rather than naughty treats. I literally walked away from my desk on Friday leaving a pack of oreos I hadn't touched and a Galaxy ripple... seriously. That never would have happened a year ago. I would have worked my way through the oreos as a main and devoured the ripple for dessert, no joke.

But what to prepare? Every week I use Heck Food UK sausages in some shape or form to prep with. Check out one of my favourite recipes below.

INGREDIENTS - SERVES 2
100g wholewheat pasta
4 sausages (I use +Heck Food zesty chicken)
50g rocket
2 salad tomatoes
300ml vegetable stock
Salt
Pepper

METHOD
1. Preheat your oven to 180oc
2. Take the sausages out of the skin and bake for 15 minutes
3. Boil your pasta in the stock for 2 minutes less than instructed on the packet 
4. Deseed and dice your tomatoes
5. When ready, drain the pasta but reserve the stock and reduce until sauce consistency
6. Combine all your ingredients and season to taste
