HAPPY NEW YEAR GUYS!!!

...let's face it, how many of you are actually awake and good to go in time for breakfast the morning after the night before?

I know it's usually brunch before I surface and want some food, especially over the festive season and JB is nowhere near human right now. Who doesn't love a lie in when there's no work knocking at your door? My favourite thing about being off work is definitely picking and choosing my own meal times instead of eating to a clock! It might sound really strange but I love having the flexibility and with that flexibility comes brunch : ) 

HELLOOOO favourite meal of the day. Thinking about it now, my love of brunch may have stemmed from binge watching reruns of sex and the city episodes back in college. I mean come on... didn't any of you watch those episodes and think I want that? To be the type of person that is fiercely independent with a great job but seems to have the time to fit in mammoth brunches with their friends every day (or so it seemed). That is what holidays have come to mean to me...

The recipe below is one of my favourites and is so quick and simple to make, also not too bad on the calorie front at 333 kcal per portion and will fit in with your #newyearnewme resolutions : ) I know you lot!

INGREDIENTS - serves 1
2 sausages taken out of their skin
1 egg
5 cherry tomatoes
1/2 spring onion, black pepper, mixed herbs & chilli to garnish

METHOD
1. Pre-heat the oven to 200oc
2. Shape the sausage meat into a patty
3. Sear the patty in a dry pan and transfer to the oven for 20 minutes
4. Slice the cherry tomatoes and season with pepper herbs and chilli flakes
5. Fry the egg to your preference
