SALTED CARAMEL SAUCE

INGREDIENTS
100g sugar
45g salted cubed butter
60ml double cream
1/2 tsp salt

METHOD
1. Heat salt & sugar in a pan until it 'melts' (turns into a clear liquid) then starts to turn to a golden caramel colour
2. Add the butter a cube at a time stirring as you do so (it will bubble up, don't worry that's normal)
3. Add the double cream and stir in until you have a nice consistent colour
4. Pour into a sterilised jar for storing or serve straight away
