CLEMENTINE PANNA COTTA

INGREDIENTS - serves 6
Juice and rind of 6 clementines
250ml double cream
200ml milk
2 tbsp caster sugar
4 leaves of gelatine

FOR THE JELLY
Juice and rind of 2 clementines
1/4 tsp of agar agar
1 tbsp lemon juice
1 tbsp sugar

FOR THE BERRIES
150g mixed berries
1 tbsp sugar
1/2 tsp ground cinnamon
Pinch of ground nutmeg
Pinch of ground ginger

FOR THE CITRUS SABLE
100g plain flour
75g unsalted butter
100g caster sugar
2 egg yolks
zest of an orange and clementine

METHOD
1. Pre-heat the oven to 190oc
2. Soak the gelatine leave in water until soft
3. Add the remaining ingredients fro the panna cotta into a pan and heat gently. DO NOT BOIL, this will change the texture
4. When the gelatine leaves are soft, squeeze out the excess water and add to the cream mix stirring until completely dissolved
5. Pour the panna cotta mix into serving dishes and pop in the fridge to set
6. For the biscuits, make a dough out of the ingredients and rest in the fridge in cling film to firm up (this will make it easier to use later)
7. After 10 minutes roll into a cylinder then cut slices approximately 1/2 a cm thick then bake for 8-10mins, they will firm up as they cool down
8. To spice the berries, add all the ingredients into a small pan and heat through swirling instead of stirring to keep the berries whole
9. Once the spices have combined fully, set to one side
10. Lastly, to make the jelly, mix the ingredients together and bring to the boil until the agar agar has dissolved
11. Take the jelly mixture of the heat and pour into molds straight away as it sets at around 40oc
12. Put it all together and plate up as you wish
