INGREDIENTS - serves 2

6 tomatoes
1/2 onion
1 clove garlic 
450ml vegetable stock
1 tbsp olive oil
1 tsp mixed herbs
Pepper to taste

1. Finely dice the onion and garlic
2. Roughly chop the tomatoes
3. Heat the oil in a pan and add the onion and garlic, stirring so they don't burn
4. When the onion is translucent, add the tomatoes and stir until they start to release some juice, this will intensify the flavours
5. Add the stock and simmer for 10 minutes
6. Blend the soup then return to the pan to reduce until it is the desired thickness
7. Season with black pepper and mixed herbs before drizzling with a little cream
