FRESH HERB, CHICKEN & POMEGRANATE SALAD

INGREDIENTS - serves 6
whole chicken (portioned)
1.5l chicken or vegetable stock
bunch of parsley
bunch of mint
bunch of coriander
1 red onion
300g brown rice or bulgar wheat
seeds of 1 pomegranate
2tbsp olive oil
1tbsp lemon juice
salt
pepper

METHOD
1. Put your chicken in a pan and cover with the stock, leave on simmer and poach for 30 mins
2. Prepare your rice or bulgar wheat as required on the packet
3. Finely slice your red onion and herbs and mix together in a bowl with the oil and lemon juice
4. Once the chicken is cooked finely slice and add to the herbs
5. Drain your rice or bulgar wheat and add to the bowl
6. Give it all a good mix and season with salt and pepper
7. Serve hot or cold
