Quick and easy...

I was having a conversation with one of my friends last night and she asked me to post a couple of midweek dinner ideas to save her from the monotony of eggs. I get it, eggs are quick and easy and sometimes you have a real craving for them. On the days that eggs won't do though, here's a quick and simple dinner idea for you RB! This can be made with diced chicken instead of prawns or a range of vegetables for a vegetarian option. Here's to the first of many mid week options.

INGREDIENTS - serves 2

150g spaghetti
150g deveined king prawns
100g cherry tomatoes
1 cloves of garlic
1 onion
1 chilli (depending on heat)
1tbsp olive oil
1tsp oregano (mixed herbs will do)
salt and pepper to taste


1. Roughly chop your tomatoes and put them in a bowl to one side with a little salt and pepper on them. I think this helps intensify the flavour in a short period of time
2. Boil a kettle for your pasta, when done add pasta to boiling lightly salted water and cook for 2mins less than the time advised on pack
3. Finely dice onion, chilli and garlic and sauté in a separate pan with your oil
4. When your onion is opaque throw in the king prawns, oregano and tomato mixture and keep stirring on a low heat
5. Drain your pasta and add to the sauce pan when prawns are just turning pink
6. Cook for a further 2mins and serve
